I am only going to report on dinner because breakfast is always the same thing (oatmeal and a piece of fruit for me and cold cereal for the boys) and lunch is either a spring mix salad with grilled chicken or leftovers.
Dinner tonight is teriyaki chicken thighs, brown rice, corn on the cob (leftover from girls night in) and a spring mix salad. To make the teriyaki chicken, I just used up the last of the teriyaki sauce (2/3 cup or so) and added fresh grated ginger root, grated garlic cloves and the juice of one lemon. I let the chicken marinate in in for an hour or so and baked at 375° until done.
